Ítem An Overview on Nutritional Aspects of Plant-Based Beverages Used as Substitutes for Cow’s Milk(MDPI, 2021-08) Fructuoso, Isabel; Romão, Bernardo; Han, Heesup; Raposo, António; Ariza-Montes, Antonio; Araya-Castillo, Luis; Puppin Zandonadi, RenataThe presence of milk in meals and products consumed daily is common and at the same time the adoption of a milk-free diet increases due to milk allergy, lactose intolerance, vegan diets, and others. Therefore, there is an increasing demand for plant-based beverages, which present variable and, sometimes, unknown nutritional characteristics. This study sought to com-pare the nutritional aspects of plant-based beverages used as substitutes for cow’s milk described in scientific studies. Therefore, we used a review of the scientific literature on PubMed, Google Scholar, Scopus, Web of Science, Google Patents, Embase, and ScienceDirect databases. The in-clusion criteria were scientific studies referring to plant-based beverage used as an alternative to cow’s milk; published in the English language; present data on the serving size, ingredients, and nutritional composition, containing at least data on energy and macronutrients of plant-based bev-erages. Ingredients and data on energy, macronutrients, and, if available, dietary fiber and some micronutrients of plant-based beverages were collected. Data were obtained from 122 beverages of 22 different matrices, with soy being the most used (27.87%, n = 34). The variation in the amount of nutrients found was 6–183 Kcal/100 mL for energy value; 0.00–22.29 g/100 mL for carbohydrate; 0.06–12.43 g/100 mL for protein; 0.00–19.00 g/100 mL for lipid; 0.00–4.40 g/100 mL for dietary fiber; 0.00–1252.94 mg/100 mL for calcium; 0.04–1.40 mg/100 mL for iron; 0.84–10,178.60 mg/100 mL for magnesium; 0.00–343.43 mg/100 mL for sodium. Salt was the most commonly found added ingredient in plant-based beverages. Some beverages have reached certain amounts of cow’s milk nutrients. However, studies have pointed out differences in their qualities/types. Thus, attention is needed when replacing milk with these alternatives. © 2021 by the authors. Several researchers have studied the importance of agroforestry, but little attention has been paid to livelihood resilience and local economic development in developing countries. This study aims to find the role of small-scale agroforestry in local economic development in the Shangla and Swat districts of Khyber Pakhtunkhwa (KPK) Province, Pakistan. In this study, a total of 350 quantitative household surveys, 12 qualitative household case studies, and interviews of experts are used. The ordinary least squares (OLS), linear regression model, household income, wealth index, and five capitals of sustainable livelihood approach (SLA) were used to measure livelihood resilience. Results show several significant findings which may apply on a larger scale and in other cities of Pakistan or other countries. First, it directly shows the association between agroforestry, resilience-building, and local economic development. Second, financial capital can be improved through agroforestry, which can improve other capital assets. Third, small-scale agroforestry brings non-financial benefits such as environmental sustainability, improved living standards, reduced soil erosion, and provided shade. Fourth, irrigation plays a vital role in building livelihood resilience and promoting agroforestry. Lastly, on-farm diversity can be improved through agroforestry. This research discusses several practical implications along with recommendations for future research. © 2022 by the authors. A quantitative method was used. The evaluation of the measurement model verified the quality of construct measures. Findings from statistical analyses demonstrated the significant associations among research variables, and identified the mediating nature of FSC love and FSC respect. In addition, the important moderating effect of perceived FSC ticket price was found. A prominent role of ambient condition quality in eliciting approach behaviors was also explored. Overall, our theoretical framework contained a prediction power for approach behaviors. The research findings thus assist FSC researchers and practitioners to better understand the process of generating the customer decision-making process and behaviors that are positive for full service carriers. This research hence successfully fulfilled its objective to discover the influences of the customer approach behaviors in the full service carrier (FSC) industry. © 2020 by the authors. Therefore, an increasing dependence of consumers on online platforms as a source of information for decision-making has given rise to the need for further research into the quality of information in the form of online physician reviews (OPRs). Methods: Drawing on the signaling theory, this study develops a theoretical model to examine how linguistic signals (affective signals and informative signals) in physician rating websites affect consumers’ decision making. The hypotheses are tested using 5521 physicians’ six-month data drawn from two leading health rating platforms in the U.S (i.e., Healthgrades.com and Vitals.com) during the COVID-19 pandemic. A sentic computing-based sentiment analysis framework is used to implicitly analyze patients’ opinions regarding their treatment choice. Results: The results indicate that negative sentiment, review readability, review depth, review spelling, and information helpfulness play a significant role in inducing patients’ decision-making. The influence of negative sentiment, review depth on patients’ treatment choice was indirectly medi-ated by information helpfulness. Conclusions: This paper is a first step toward the understanding of the linguistic characteristics of information relating to the patient experience, particularly the emerg-ing field of online health behavior and signaling theory. It is also the first effort to our knowledge that employs sentic computing-based sentiment analysis in this context and provides implications for practice. © 2021 by the authors. This descriptive cross-sectional population-based study is conducted following three steps: (i) the application of an instrument to identify food neophobia in Brazilian children by their caregivers; (ii) the instrument’s score definition; and (iii) the evaluation and characterization of the national prevalence of food neophobia among Brazilian children. The scores were categorized into three levels, based on the tertial approximation: low, moderate, and high. The study had 1112 participants, and the prevalence of high food neophobia was observed in 33.4% of Brazilian children. The prevalence of food neophobia allowed us to identify this behavior in Brazilian children and better understand the population. Boys were significantly more neophobic than girls. The general neophobia score and domains did not significantly differ between Brazilian regions and age groups. It is worrying that food neophobia did not decrease with advancing age. The score for the complete instrument with 25 items, or the 3 domains, makes its use practical. It can be used to assess neophobia with more caution, evaluate the most neophobic children, and enable more targeted professional interventions to promote healthier and sustainable eating habits. © 2022 by the authors. The meat cooking preparation can promote significant changes in the meat’s chemical composition and physical characteristics. Such transformations can impact both the acceptance of the product and consumers’ health. Due to the different thermal processes altering the physical-chemical characteristics of meat, the present study aimed to evaluate the physicochemical characteristics of fillet steak submitted to different cooking methods: pan-frying with and without oil and air fryer. We performed the analysis to evaluate the physicochemical characteristics considering moisture, lipid, protein, ash, sodium, and potassium content, cooking loss index and colorimetry in three degrees of doneness of the meat, rare, medium, and well done. The fillet steak prepared by pan-frying with oil lost higher moisture and weight than the other samples. The air fryer method presented the highest moisture content. There was a significant difference in lipid content in which the pan-frying with oil fillet steak showed the highest amount of lipids. The pan-frying with oil steak fillet also presented more changes in the colorimetric parameters evaluated compared to the other samples. The pan-frying with oil cooking method promoted more pronounced changes in the steak fillet, and the cooking air fryer, the changes in meat quality are less pronounced. Therefore, the air fryer can be considered a good alternative for cooking meat. © 2022 by the authors. The increase in customer complaints increases the tendency to switch to other 3PL service providers. As Asian markets lead the growth of e-commerce, covering approximately 50% of the global e-commerce market, whether the customer will continue to shop online or not is no longer the issue. Although having the proper logistics provider to support online sellers’ business is crucial, most studies have focused on the online shopper’s perspective and employ the service quality theory. Observably, the satisfaction and reuse intention of the 3PL from the online retailer’s perspective is largely neglected. This study identified the factors influencing the satisfaction and reuse intention of 3PL services among online sellers in Malaysia by employing and expanding the stimulus-organism- response (SOR) theory. A purposive sampling method was employed, and the data were gathered via an online survey among online sellers. Additionally, smart partial least squares (SmartPLS) was applied to test the hypotheses. The results indicated that reliability had a positive effect on satisfaction, and satisfaction had a positive relationship with the reuse intention of certain 3PL services. Moreover, satisfaction mediated the relationship between reliability and reuse intention, whereas price fairness strengthened the positive relationship between satisfaction and reuse intention. The findings enhance studies that employed the SOR theory, particularly relating to online sellers’ behaviour on 3PL services. This study investigates the impact of road and transportation on the health of the host community and its sustainable destination development. Data were collected from the host community and were analyzed through factor analysis and structure equation modeling to evaluate the in-hand data of the structural relationship. It is revealed that road and transportation has a significant role in the improvement of health. Moreover, income mediates the effects of accessibility and employment on health. This study will help the authorities and policy maker to formulate policy regarding road and transportation that will improve health of the host community and its sustainable development. The study is limited to the seven districts of Hazara division and explores the societal aspect of CPEC on the host community, future researcher may investigate other regions and may select some other variables such as effect on GDP, per capita income, etc. © 2021 by the authors. The present study investigated the influence of SNS engagement on traveller loyalty generation for a chain hotel brand and the health of this business by considering the roles of brand attitude, awareness, trust, and attachment and the impact of age. Fostering customers’ SNS engagement in the hospitality industry will be a vital constituent of hotels’ sustainable business. A quanti-tative process was used to meet the research objectives. The proposed research framework encom-passing these variables was successfully developed. The framework’s efficiency in predicting brand loyalty was also demonstrated. Our results showed that SNS engagement considerably enhances loyalty and other study constructs. Attachment had a salient role in boosting loyalty. In addition, age had a moderating influence. The study constructs maximized the influence of SNS engagement on loyalty as mediators. Overall, our results considerably increase our understanding regarding the role of SNS engagement in the formation of traveller loyalty to chain hotel brands and the sustain-ability of such businesses.Ítem Sustainable growth in the agro-food cooperatives of Castilla-La Mancha (Spain)(MDPI, 2020-06-01) Hernández-Perlines, Felipe; Ariza-Montes, Antonio; Araya-Castillo, LuisThe present study aims at analysing the sustainable growth in the agro-food cooperatives of Castilla-La Mancha (Spain). To this end, the study examines the impact of the corporate social responsibility (hereinafter CSR) on the performance of the agro-food cooperatives. CSR is analysed based on the three dimensions suggested by the triple bottom line approach: Economic dimension, social dimension, and environmental dimension. Results are analysed using a partial least squares regression (PLS-SEM). The main contributions are as follows: (1) The measurement of the CSR through the triple bottom line approach has proven to be appropriate for the agro-food cooperatives of Castilla-la Mancha, as it presents adequate values of reliability and validity; (2) these dimensions make up the CSR, although the environmental dimension is the most relevant one for the agro-food cooperatives of Castilla-La Mancha; and (3) CSR positively and significantly affects the performance of agro-food cooperatives, as it explains 39.2% of their variance, thus confirming a sustainable growth model for the agro-food cooperatives of Castilla-La Mancha.Ítem The Influence of Decision Making on Social Inclusion of Persons with Disabilities: A Case Study of Khyber Pakhtunkhwa(MDPI, 2022-01-02) Ahmad, Shakeel; Islam, Mazhar; Zada, Muhammad; Khattak, Afraseyab; Ullah, Rezwan; Han, Heesup; Ariza-Montes, Antonio; Araya-Castillo, LuisDecision making is an essentially social process adopted by individuals or groups to identify and choose the best choice among several alternatives. Decision-making choices are influenced by the preferences, values, and beliefs of the individuals or groups involved in the decision-making process. This study was conducted to analyze the social inclusion of Persons with Disabilities (PWDs) in the context of their participation in decision making. The study area consisted of 8028 PWDs registered with the government of Pakistan, from which a sample of 488 PWDs was selected through a multistage stratified random sampling technique. These PWDs included physically disabled, blind, crippled, and deaf persons; however, the data were collected from those who were able to be interviewed. Chi-square and Kendall’s Tau-b tests were used to determine the strength, level, and direction of association among variables. At the multivariate level, the study found a spurious relation between social inclusion and participation in decision making when controlling for gender, monthly family income, and level of disability of the PWDs. The results highlighted that participation in decision making improved the social inclusion of male and moderately disabled PWDs more positively. However, participation in decision making was a universal feature explaining the social inclusion of PWDs irrespective of their monthly family income. The logistic regression model explained that the social inclusion of PWDs was more likely to occur when PWDs were married, had high monthly family income (PKR 16,500 and above), belonged to a joint family, and actively participated in decision making. The study recommends that ensuring the participation of PWDs in decision making in family, community, school, and other relevant institutions ultimately enhances their social inclusion.Ítem Well-Being and Entrepreneurship Intention: An Empirical Study of New Perspectives(MDPI, 2022-04-01) Contreras-Barraza, Nicolás; Acuña-Duran, Eduardo; Oyanedel, Juan Carlos; Salazar-Sepúlveda, Guido; Vega-Muñoz, Alejandro; Ariza-Montes, AntonioThe research aims to examine the relationships between the constructs of entrepreneurial intention according to the theory of planned behavior (TPB) model and subjective well-being (SW). The model used considers the works proposed by Liñán and Chen and Oyanedel, Vargas, and Paez, and a questionnaire was applied to 1043 people in an urban population of the three main regions of Chile using multivariate statistical methods for its analysis (structural equation models). The proposed hypotheses are that subjective well-being towards entrepreneurship has a direct and positive effect on entrepreneurial intention (H1), personal attitude towards entrepreneurship has a direct and positive effect on entrepreneurial intention (H2), perceived behavioral control towards entrepreneurship has a direct and positive effect on entrepreneurial intention (H3), and subjective norm towards entrepreneurship has a direct and positive effect on entrepreneurial intention (H4). The results indicate that subjective well-being on entrepreneurial intention shows indirect effects mediated by subjective norm, contributing to the theoretical development concerning well-being incidence on entrepreneurial behavior, providing theoretical elements that can serve as a basis for further strengthening the understanding of the relationships between personal well-being, economic growth, and the harmonious relationship with the environment. © 2022 by the authors. Descriptive analyses were carried out to determine the measures relating to centralising ten-dency and dispersion of the sample. We compared means and proportions through t-tests and Analysis of Variance (ANOVA). The sample size was 206 individuals, respecting a minimum of eight respondents per item to validate the instrument. We recruited Nutritionists from Portugal nationwide using the list of electronic mail provided by the Order of Nutritionists. We sent an electronic mail to all the Nutritionists registered in this Order. We also used messaging applications and social networks (Instagram, Facebook) to reach Nutritionists who were not accessing electronic mail. Most respondents are women (92.5%), young (mean age = 31.4 ± 8.07 years; 54.2% of participants aging under 30 years), single, and with no children. More than half are Catholic (73.8%) and have less than ten years of nutritionist undergraduate completion (55.4%). The only variable that influences well-being at work is the economic variable Household Monthly Income. Those who earn less than € 500.00 per month perceive themselves at a lesser state of work well-being than those who earn from € 2501.00 to € 5000.00 per month. © 2021 by the authors.
